Chicken Brown Rice Bowl (Zinques Le Bowl)
This recipe is inspired by the LA restaurant Zinque. A simple bowl of chicken and rice is perfect for lunch or dinner. It’s also a great way to consume leftover chicken (or you can use turkey!). When my sister Lori sent me this copycat recipe from an LA restaurant, I wasn’t sure about the combination of Sriracha and Gruyere. But Lori is a fantastic cook (she even won a cooking contest in Vegas a few years ago!) And she assured me that I would love this bowl – and she was right!

I also enjoy cooking with lovingly treated foods, including locally grown organic products and animals raised by humans. I buy a lot from a farm in the Shenandoah Valley, Virginia called PolyFace, which believes that “plants and animals should be given a habitat in which to express their physiological uniqueness.”
And it’s not just what you eat, it’s the state you are in when you eat. Because if you feel angry, guilty, worried, or sad while you eat, your body metabolizes food in a completely different way.
If you eat while your body is in a stressed “fight or flight” mode (known as a sympathetic state), your digestive system cannot properly process its food, which, among other things, can lead to this. Weight gain.
The fastest way to put your body into a relaxed parasympathetic state (the “rest and recovery mode”) that naturally activates your digestive process is to breathe deeply. Before you eat anything, sit down and just take a few deep breaths – inhale slowly through your nose, then push the air out through your mouth.
Taking a few breaths before you eat will also bring you in touch with your body’s wisdom. I love this from the great mindfulness book “How to Eat” by Thich Nhat Hanh: “If we take a moment to sit and breathe before eating, we can get in touch with the real hunger in our body. We can find out if we are eating because we are hungry or if we are eating because it is time to eat and the food is there. If we are careful and take our time, we will also know how much to eat. “
Chicken Brown Rice Bowl (Zinques Le Bowl)

This delicious Chicken Brown Rice Bowl is a simple one-bowl meal made with chicken breast, rocket, avocado, tomatoes, Gruyere, and a Sriracha yogurt sauce.
For the salad dressing:
- 2 tablespoon Greek whole milk yogurt
- 1 1/2 teaspoon sriracha sauce, or more to taste
- 1 teaspoon water, too thin
- 1 ½ cups arugula
- ½ Cup cooked brown rice
- 4th Ounces cooked skinless chicken breast
- 1 ounce avocado, diced
- 6th Cocktail tomatoes, halved
- ½ ounce shaved Gruyere cheese
- Kosher salt
- Freshly ground black pepper, taste
Mix the yogurt, sriracha and water in a small bowl.
Put the rocket in a shallow bowl. Brush with rice, chicken, avocado, tomatoes and cheese.
Sprinkle with a pinch of salt and fresh pepper and drizzle with the prepared dressing.
