1. Heat up a gas grill on one side or push hot coals to one side of a charcoal grill. Divide 1 pound of freshly made pizza dough into 4 pieces on a lightly floured work surface. Stretch each piece into an 8 inch round; Place each on parchment paper or aluminum foil coated with olive oil. Lift 2 rounds of dough and carefully fold onto the illuminated side of the grill. Brush the dough with olive oil. Grill, open, 1 to 2 minutes. Use a pair of tongs to turn the dough over and place it on the unlit side. Work quickly and top with fresh mozzarella, tomato slices, zucchini ribbons, red onion slices and fresh corn kernels. Cover and grill until the cheese has melted, 2 to 4 minutes. Remove and top with Cotija cheese, coriander, a dash of olive oil and flakes of sea salt. Cover with foil to keep warm. Repeat the process with the rest of the dough.
